Maqui Berry Cheesecake Bites

Ingredients

  • 2 Tbsp MaquiOrganic 100% maqui berry powder

  • 1 cup graham-cracker crumbs (or gluten-free oat/almond flour mix)

  • 2 Tbsp melted butter (or coconut oil for dairy-free)

  • Pinch sea salt

  • 250 g (≈ 9 oz) cream cheese, softened

  • ½ cup sour cream (or plain Greek yoghurt)

  • 1 tsp vanilla extract

  • 2 large eggs

  • ⅓ cup Maqui Berry maple syrup

  • Zest of one small lemon (optional, for fresh note)

  • Fresh berries and/or extra maqui powder for garnish

Directions

  1. Pre-heat your oven to 325 °F (165 °C). Line a 12-cup mini-muffin tray with liners or lightly grease.

  2. In a small bowl, combine the graham crumbs (or alternative flour mix), melted butter (or coconut oil) and a pinch of sea salt. Press roughly 1 Tbsp of the crust mixture into each mini cup to form the base.
